The elderflower has very unique, mellow flavour, with tiny white flowers - they are a perfect for weddings! We have just been to a wedding this weekend we were invited to. To which I was asked to bake cakes. The recipe of the Elderflower cake is from the Fern Verrow cookbook, which was written by a lovely biodynamic farmer couple - where I have volunteered. The cake was a great success, however making it wasn't easy. Patience is required but the desired result is guaranteed!

This a great bake when you have friends coming over and don't want to spend too much time preparing and cooking. You just need to calculate the long baking time in! Our friends came over with three small children and they all gobbled it up happily!

I prefer consuming local, seasonal fruits and veggies. This goes hand in hand with getting bored with the same old veggies again and again. That's how we got bored of the Butternut Squash, which is otherwise a favourite. But now problem, this is the time when I prepare the Sunshine Cream! I chose this name because its colours are so beautiful, and just by hearing its name my mood lifts in these dark, wintery days. Be careful, there is never enough of these - I told you so...

We have been getting really bored with all the same flavours and dishes in our everyday life. We wanted something different, something unusual. (At least Matthew definitely did!) What should the wife do? Hm...
When we lived in the UK we usually ate Indian and really loved it. We have also been swamped with lots of unsaleable red onions being the end of the season for it. We had to make do with them. That's how I got the idea to cook onion bhajis. I've been inspired by the bbc Good Food recipe. Our daughter said it was like eating in a restaurant. It's been a treat!

This recipe does not sound too exciting but the fact that all vegetables were grown, tended and harvested by Matthew and the team and we cooked and consumed it on the spot is a miracle. We were blown by the distinctive flavours which can only be obtained from the freshest, most local vegetables. From the boxes this week you can also indulge in this flavourful miracle!

Instead of spaghetti we used courgettes as ribbons, thus we could spin them onto our forks the same way we do with spaghetti - that's the uniqueness of this dish. The children loved it, too!
