New Potatoes with Green Peas

This recipe does not sound too exciting but the fact that all vegetables were grown, tended and harvested by Matthew and the team and we cooked and consumed it on the spot is a miracle. We were blown by the distinctive flavours which can only be obtained from the freshest, most local vegetables. From the boxes this week you can also indulge in this flavourful miracle!

Ingredients:

1 kg New Potatoes

1 bunch of Spring Carrots

a portion of Green Peas

2 pcs of cooking onions

a bit of butter

Parsley, tarragon, thyme or any other herbs

Cook the potatoes with skin on in salty water. Once cooked, drain the water, add a little bit of butter and the chopped herbs, shake vigorously with lid on.

Slice up the onions, carrots, shell the peas. Toast the onions a bit, then add the carrots and peas. Add salt. Cook a little, stirring occasionally. Don't wait till colours become stale - all colours need to stay vibrant and beatiful. This was all flavours nutritive values are retained.

Serve with some salad.
