Spinach & feta quiche
What to do with all that spinach?
At Zsámboki Biokert we have plenty of fresh, tender spinach — it's the star of the coming weeks. This simple yet delicious and nutritious quiche is the best way to make the most of it.
Add to your basket:
- 600g Organic spinach (The star of the week — fresh and flavourful)
- 6 Organic eggs (The base of the filling)
- 2 Organic onions (For depth of flavour)
- 2 cloves Organic garlic (For character)
- 360g Organic flour (For a crispy pastry base)
- 1 tsp Organic nutmeg (The filling's secret spice)
- A handful Organic fresh parsley (To finish, freshly scattered)
- 1 bag Organic salad mix (A light side salad)
- 400ml Cream (Unfortunately only available elsewhere for now — we're working on it)
- 400g Feta (Unfortunately only available elsewhere for now — we're working on it)
Method:
Sauté the onion and garlic in a little oil, then add the spinach and cook for 2–3 minutes until wilted. Beat the eggs with the cream, salt, pepper and nutmeg, then fold in the spinach and crumbled feta. Rub a tart tin with butter. Make a shortcrust pastry from the flour, butter and a pinch of salt, chill, then roll out and line the tin. Pour in the filling and bake at 180°C for 35–40 minutes. Rest for 10 minutes before serving, scattered with fresh parsley.
