Ingredients
- 1 medium sweet potato
- 1–2 tsp olive oil or butter (optional, for extra creaminess)
- Pinch of salt
- Optional: cinnamon + honey/maple syrup (sweet) or black pepper + lemon (savory)
Bake

Heat oven to 200°C / 400°F.

Wash the sweet potato and poke it 6–8 times with a fork.

Bake on a tray for 45–60 min, until very soft (a knife slides in easily).
Make the spread
4. Let it cool a bit, then split and scoop out the flesh.
5. Mash with a fork until smooth. Mix in salt and olive oil/butter if using.
Serve
6. Spread on toast.
