Sweet White Onion Soup with Sage

Ingredients:

1 kg - 1,5 kg red and sweet white onions mixed1 bun of sage

5-7 cloves of garlic

olive oil and salt

Peel and slice onions and fry them in a little oil. A high-rimmed ironpan is perfect for this. Put lid on. Stir occasionally to avoid burning. Once the onions get clear and start to toast, add boiling water to it. Put lid on and cook on low heat for an hour or two. Add garlic and sage and salt halfway through and add water if needed. Soup is ready when thicker and the water is also flavoursome, doesn't taste of water any more. It is best served with toast and grated cheese.

P. S.: Don't throw away the onion peels - if washed you can make tea out of it which is perfect for many alimonies.

P.S: You can always add some potatoes, sweet potatoes for a more hearty meal.
