Warm new potato salad
Zsámboki new potatoes have arrived — the true taste of spring!
Fresh new potatoes and spring onions are now available at Zsámboki Biokert — both NEW in our range this week! This simple, warm salad with a mustard and vinegar dressing is the best way to celebrate the season's finest moment.
Add to your basket:
- 500 g Organic new potatoes (Balatoni Rózsa variety — NEW in our range!)
- 1 bunch Organic spring onions (Fresh and not to so mild — NEW in our range!)
- 2 cloves Organic garlic (For depth in the dressing)
- a few sprigs Organic parsley (Scattered fresh on top)
- a few sprigs Organic dill (Optional, for a fresh summery character)
- 1 tbsp Dijon mustard (unfortunately only available elsewhere for now — we're working on it)
- 2 tbsp White wine vinegar (unfortunately only available elsewhere for now — we're working on it)
Method: Cook the new potatoes in their skins in salted boiling water for 15–20 minutes until tender. Drain and slice while still warm. Meanwhile, gently fry the sliced spring onions and garlic in a little oil for 3–4 minutes until softened. Whisk together the vinegar, mustard and 3 tbsp olive oil, season well with salt and pepper. Toss the warm potatoes with the onions and dressing until well coated. Scatter with fresh parsley and dill and serve immediately.
