Onion Bhajis with minthy Yoghurt Sauce

We have been getting really bored with all the same flavours and dishes in our everyday life. We wanted something different, something unusual. (At least Matthew definitely did!) What should the wife do? Hm...

When we lived in the UK we usually ate Indian and really loved it. We have also been swamped with lots of unsaleable red onions being the end of the season for it. We had to make do with them. That's how I got the idea to cook onion bhajis. I've been inspired by the bbc Good Food recipe. Our daughter said it was like eating in a restaurant. It's been a treat!

Ingredients:

kb 0.7 kg red onions peeled and sliced

300g flour (we didn't have gram flour - we used wholewheat and worked out just fine)

2 pcs of eggs

water

salt

garam masala

curry

0.4 l sunflower oil

Yoghurt, salt and fresh mint leaves for the sauce.

Soak the onions in a big bowl of water. Mix up the flour, eggs, salt and the spices. Add in the water and mix it with a blender until smooth and a somewhat thick batter. Drain the onions then mix in to the batter well. Heat up the oil in a deep pan and put a few tablespoons of onion batter into it. (Be careful here as the oil can get very hot!). Fry till golden brown turning once in a while.

Mix the freshly cut mint leaves, few cloves of garlic and salt into the yoghurt. Instead of mint you can use coriander or sage or parsley greens.

Serve this with salad mix.
