
Curly Kale Pesto

This is a very easy-to-make, simple, and nourishing sandwich spread — and best of all, it doesn’t even require cooking.
Prepare a bunch of fresh curly kale. First, gently tear the leaves from the thick stems, using only the softest, most flavorful parts. Place the leaves in a food processor, then add two cloves of garlic, a pinch of sea salt, freshly ground black pepper, and a good-quality extra virgin olive oil.
As the machine begins to work, slowly spoon in half a cup of nutritional yeast — this gives the spread its rich, cheese-like flavor that makes it truly special. The mixture is nearly ready when we finish it off with a touch of plant-based cream, making it extra smooth and velvety.
This green, silky-textured spread works beautifully as a sauce for freshly cooked pasta, but it’s also perfect as a pizza base — especially if you're craving something different from the usual tomato sauce. Spread thickly on a slice of crusty toast, it makes a wonderful breakfast or appetizer, too.
