Lentil Stew with Carrots and Spring Onions

Ingredients:

300g Brown Lentils (soaked the night before)

2 heads of Red Onions

0.4 kg Carrots

0.2 kg Sorrel leaves

few cloves of Garlic

some Spring Onions

Salt, Pepper and Herbs

Chop onions and fry in a little oil in a big pot. Let's mix in the chopped up carrots. After this pour in the pre-soaked lentils and pour boiling water on it, put salt and other herbs of your choice and put lid on. Let the lentils soften and cooked thoroughly. As soon as the lentils are ready, put in the sorrel (cut into ribbons) and garlic.

Sprinkle Spring Onions and yoghurt over it when serving.
