The Astrie mill was created by two French brothers in the 1950s.
Their concept was to create a stone mill that would gently grind the wheat in a "cold" way, ensuring that the grains would be the "soul" of the wheat.

In the case of "light" flour, also known as semi-brown, the wholemeal flour coming out of the mill is sifted through a 300 sieve, which retains the fine bran, so that the flour is not ground.
